Ingredients:
- 4 venison steaks (6 oz each), thinly sliced
- 8 cups beef broth
- 1 large onion, halved
- 4-inch piece ginger, sliced
- 4 cloves garlic, smashed
- 1 cinnamon stick
- 4 star anise
- 1 tbsp coriander seeds
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 1 package rice noodles
- Fresh herbs (cilantro, Thai basil), bean sprouts, lime wedges, and sliced jalapeños for garnish
Method:
- In a large pot, bring beef broth to a boil. Add onion, ginger, garlic, cinnamon stick, star anise, and coriander seeds. Simmer for 45 minutes.
- Strain the broth and return it to the pot. Add fish sauce and soy sauce.
- Cook rice noodles according to package instructions.
- In a separate skillet, sear venison slices for 1-2 minutes per side.
- Assemble pho by placing rice noodles in bowls, topping with venison slices, and pouring hot broth over.
- Garnish with fresh herbs, bean sprouts, lime wedges, and sliced jalapeños.
