Ingredients:

  • 4 venison steaks (6 oz each), thinly sliced
  • 8 cups beef broth
  • 1 large onion, halved
  • 4-inch piece ginger, sliced
  • 4 cloves garlic, smashed
  • 1 cinnamon stick
  • 4 star anise
  • 1 tbsp coriander seeds
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 package rice noodles
  • Fresh herbs (cilantro, Thai basil), bean sprouts, lime wedges, and sliced jalapeños for garnish

Method:

  1. In a large pot, bring beef broth to a boil. Add onion, ginger, garlic, cinnamon stick, star anise, and coriander seeds. Simmer for 45 minutes.
  2. Strain the broth and return it to the pot. Add fish sauce and soy sauce.
  3. Cook rice noodles according to package instructions.
  4. In a separate skillet, sear venison slices for 1-2 minutes per side.
  5. Assemble pho by placing rice noodles in bowls, topping with venison slices, and pouring hot broth over.
  6. Garnish with fresh herbs, bean sprouts, lime wedges, and sliced jalapeños.
