Ground Venison Sausage Recipes

For many of us, most of our venison will end up as ground venison.

While there are many fantastic dishes you can make with ground venison, one of my favorite things to make is venison sausages.

I’ve made various types of venison sausages, but as I develop more recipes I will continue to add to this list.

So feel free to check back every once in a while.

Venison Dinner Sausage

Ground Venison Sausage Recipes

This venison sausage is a whole meal. The sausage itself uses very little seasoning so you can taste the rich flavors of the venison.

What really brings this sausage to life is the accompanying ingredients.

The sausage is roasted in the oven along with tomatoes, peas, courgettes, and wine.

The finished product is an incredible venison sausage meal, that is rich with flavor but not too heavy.

For the sausage:

  • Venison
  • pork belly
  • salt
  • dry mustard
  • black pepper
  • sweet paprika
  • Red wine
  • garlic
  • chili powder

For cooking:

  • lima beans
  • Courgetticherry tomatoes
  • Onion
  • garlic cloves
  • green peas 
  • chanterelles 
  • 1 red wine
  • Venison stock, or beef stock
  • olive oil
  • rosemary
  • black pepper

Italian Venison Sausage

If there is one sausage to rule them all it is the Italian sausage.

No sausage packs as much flavor as the Italian sausage.

On top of the flavor, is the sausage’s versatility. You can serve it plain with bread, on a charcuterie board, or use it in pasta, etc.

The ingredients are simple, but influential when mixed together.

  • venison
  • pork belly
  • caraway seeds
  • red pepper flakes
  • garlic powder
  • paprika
  • oregano
  • dried parsley
  • salt
  • black pepper
  • dried onion
  • red wine vinegar

You can keep this sausage loose or make links, I typically do a bit of both.

Venison Breakfast Sausage

In my opinion, the breakfast sausage is the classic sausage. 

I like to have either venison sausages or wild boar breakfast sausage with a bit of wild boar bacon for breakfast every now and then.

You could cue up at the big M and wait for whatever excuse of a sausage they give you or you can make your own healthy version at home.

If you do make these sausages at home, you will need only a handful of ingredients.

  • venison 
  • pork belly
  • salt
  • dry mustard
  • black pepper
  • herbs de Provence
  • garlic 
  • maple syrup

This makes a very versatile breakfast sausage that can be paired with sweet or savory sides.

I made these with waffles for the original recipe but frequently pair them with eggs, bacon, beans, etc. You can cook this sausage in different ways, but pan frying is my favorite.

Old Fashioned Venison Sausage

Sometimes recipes were just done better before. This is the case for venison sausages.

This old fashion venison sausage uses simple ingredients to pack flavor into the sausage.

  • venison
  • pork belly
  • pork fat
  • dried sage
  • fresh parsley
  • cane sugar
  • dried onion
  • kosher salt
  • black pepper
  • breadcrumbs
  • 3 egg whites

These ingredients make for a meaty sausage with a great bind. Like some of the other sausage recipes, this can be served loose or stuffed in sausage skins.

Venison Chorizo

This sausage is a little different from the others. 

Rather than the typical savory flavors of venison sausages, this one is sweet, tangy, and a little spicy.

Being a Mexican sausage you can expect more vibrant flavors that make this a fantastic sausage to enjoy in Mexican dishes or smoked.

The ingredient list also looks a little different than the other sausages:

  • Venison
  • Pork belly
  • Ancho chili peppers
  • Guajillo chili peppers
  • Paprika 
  • Garlic
  • Cumin
  • Oregano
  • Coriander
  • Cloves
  • Apple cider Vinegar
  • Smoked salt

If you a looking for something a little different from your venison sausage this one is worth trying.
