  • 2 cups cooked chicken shredded or diced (rotisserie chicken works great)
  • 1 package 16 oz gnocchi (store-bought or homemade)
  • 2 cups fresh spinach leaves
  • 1 teaspoon dried thyme or Italian seasoning
  • Salt and pepper to taste
  • Optional: Grated Parmesan cheese for serving

Instructions

  • In a large pot or Dutch oven, heat the olive oil (or butter) over medium heat. Add the diced onion, garlic, celery, and carrots. Sauté for about 5 minutes until the vegetables soften.
