Deep Fried Oysters With Dip
Nothing is more rewarding than catching your own fresh food, and one of the easiest fresh foods to harvest are oysters.
While I try not to overindulge on shellfish, it’s hard to refrain from fresh oysters.

This recipe is a little different from most oyster recipes, but it’s one of my favorites.
The deep-fried panko texture coupled with the soft texture of the oyster makes for a great combo.
You can eat these like chicken nuggets or put them in a burger like I did.

Ingredients
- 2 lbs oysters
- 1 cup all purpose flour
- 1 cup panko
- 2 large eggs
- 1 tbsp salt and pepper
- 1 ltr cooking oil
For the dip
- 2 cloves garlic finely minced
- 3 tbsp horseradish
- 1/4 cup fresh parsley chopped
- 1/2 cup mayonaise
- 1/2 tbsp salt and pepper
Instructions
- Mix the ingredients for the sauce and set aside
- Heat the oil over medium heat until about 350F
- Rinse the oysters in fresh water. Shuck the oysters and pat dry
- Set up a breading station with the flour, panko and egg
- Whisk the egg, and add the seasoning to the flour.
- Pass an oyster first into the flour and shake of any excess. Next into the egg mixture, and then into the panko.
- Carefully lower the breaded oyster into the hot oil and cook for approximately 3-4 minutes.
- Remove from oil and place on chopping board for 1 minute for excess oil to drip off
- Serve as is or eat in a bun with some greens and sauce
