Ingredients

  • 2 cups cooked chicken shredded or diced
  • 3 medium zucchini sliced into thin rounds
  • 1 can 10.5 oz cream of chicken soup
  • 1/2 cup sour cream
  • 1 small onion chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup breadcrumbs or crushed Ritz crackers for extra flavor
  • 1/4 cup melted butter
  • Salt and pepper to taste
  • 1 tsp garlic powder optional
  • 1/2 tsp Italian seasoning optional

Instructions

  • Preheat the oven to 350°F (175°C) and grease a baking dish (about 9×13 inches).
  • Slice the zucchini into thin rounds and lightly salt them. Set aside for 5-10 minutes, then pat them dry to remove excess moisture.
  • In a large bowl, combine the cooked chicken, cream of chicken soup, sour cream, chopped onion, cheddar cheese, Parmesan cheese, garlic powder, and Italian seasoning. Season with salt and pepper to taste. Stir until well combined.
