Cesar Salad Dressing

Ingredients

  • 1 cup mayonnaise or ½ cup mayonnaise + ½ cup Greek yogurt for a lighter option
  • 1-2 garlic cloves minced
  • 2 teaspoons Dijon mustard
  • 1-2 teaspoons Worcestershire sauce
  • 3-4 anchovy fillets minced (or 1 tablespoon anchovy paste)
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons freshly squeezed lemon juice
  • Salt and pepper to taste
  • 2-3 tablespoons olive oil optional for consistency

Instructions

  • In a medium bowl, combine the mayonnaise, garlic, Dijon mustard, Worcestershire sauce, and anchovy paste or minced fillets.
  • Stir in the grated Parmesan cheese and lemon juice. Mix well until smooth.
  • Add salt and pepper to taste. If the dressing is too thick, you can whisk in olive oil a tablespoon at a time until you reach your desired consistency.
  • Drizzle over fresh Romaine lettuce, toss to coat, and garnish with extra Parmesan and croutons if desired.
